Wine

“Dark ruby ​​garnet with black reflections, typical black currants on the nose, freshly roasted coffee reminiscent of vanilla beans, juicy cassis and lively on the palate, elegantly structured, ripe tannins.”

Vineyard

Coming from the single vineyard Aubühl in Hoeflein with poor sandy soil.  Although Carnuntum is one of the warmer, Pannonian regions in Austria, the Cabernet Sauvignon needs very hot and short growing seasons to fully develop its aroma and, above all, tannins. The sandy soils of the Aubühel challenge the Cabernet Sauvignon. The stress during the summer puts a strain on the vines and the extreme heating of the sandy soil means that the Cabernet Sauvignon grapes are optimally ripe. 

Region

 Carnuntum is a wine region located in eastern Austria, near the city of Vienna. It is known for its long history of winemaking, even dating back to the time of the ancient Romans. The region takes its name from the ancient Roman city of Carnuntum, which was an important military and trading center during the Roman Empire.

Vinification

Only very ripe grapes from a  selective hand picking, selection are used. Great control in the vineyard with  selection of bunches and single berries in the cellar before fermentation. Fermentation in stainless steel vats at maximum 30 °C with regular flooding of the mash and manual pounding in order to achieve maximum extraction of colour, aroma and tannins. A maceration lasting 4 weeks takes place after fermentation. Malolactic fermentation is carried out in a mix of old & new barriques. Rest time in old & new oak barriques for 24 months. 

Enjoy with hearty red meat dishes, grilled, roasted or in a thick sauce.
