Description

As the name suggest this is the wine that goes all the way. Done according to the AOP Cabardès appellation rules with a blend of Cabernet Franc, Syrah & Merlot which are all grown on white limestone soil at a small yield of just 35 hl/ha. After harvest, grapes are fully crushed and a pre-fermentation cold maceration for 5 days takes place at 6 degrees Celsius. Yeast is added and fermentation takes place in stainless steel tanks at 28 degrees Celsius with daily pump-overs and punch downs for 25 days. Malolactic fermentation follows. The wine is matured for 12 months in oak barrels; 50% in new oak (300 l and 600 l) and the other 50% in 1 year old barrels. After bottling the wine is matured for 12 months in bottle. A precise wine with strong notes of black fruits. On the palate, aromas of graphite, menthol and black fruits (typical of its terroir and its minerality), enhanced by melted oaked notes with supple and elegant tannins and a silky palate followed by a fresh long finish. A great wine from Languedoc which is both rich and distinctive.
