Vineyard
This St. Laurent is coming from the single vineyard Edles Tal with nutritous loess soils. The St. Laurent grapes love warm days, as they do cooler nights, and most importantly windy places – like the Edles Tal. The warm pannonian climate in combination with the cool winds from the River Danube therefore brings ideal conditions for this elegant variety. The grapes are able to ripen, while also keeping their typical fresh acidity, which makes the St. Laurent wines very interesting and charismatic.
Region
Carnuntum is a wine region located in eastern Austria, near the city of Vienna. It is known for its long history of winemaking, even dating back to the time of the ancient Romans. The region takes its name from the ancient Roman city of Carnuntum, which was an important military and trading center during the Roman Empire.
Vinification
Only very ripe grapes from a selective hand picking, selection are used. Great control in the vineyard with selection of bunches and single berries in the cellar before fermentation. Fermentation in stainless steel vats at maximum 28 °C with regular pump overs during main fermentation. A maceration lasting 2 weeks takes place after fermentation. Malolactic fermentation is carried out in a mix of old 500 liters vats. Rest time in old 500 liters vats for 18 months.
