“It’s not like me to age white wine in oak barrels. Barrel-aging is really not my thing, but since contradiction and experimentation most definitely are, I decided that this type of maturation process might just be suited to this finely chiseled, mineral Chardonnay. And what a nice surprise this idea proved to be! It goes to show that only fools never change their minds.

A winemaker who’s no fool”

Ripe pear, gooseberry and green apple on the nose. On the palate it has a crisp pear drop flavour, but no sweetness, alongside baked apple with lemon zest edges. there’s a hint of wood spice around the edges from the aging in barriques with a vein of mineral chalkiness. This is a ripe Chardonnay with grapefruit and exotic notes but also with freshness and a touch of minerality. The barrel aging gives this juicy wine a pleasant nutty finish.

Region

Languedoc-Roussillon, is one of the largest and most diverse wine-producing regions in France. It is located in the southern part of the country, along the Mediterranean coast. It has a long history of viticulture and winemaking, and it’s known for producing a wide range of wine styles.

This region benefits from a Mediterranean climate, characterized by hot, dry summers and mild, wet winters. The diverse geography includes coastal plains, rolling hills, and mountainous areas, which create a variety of microclimates and soil types.

Cabardès

Cabardès is situated in the western part of the Languedoc-Roussillon region, not far from the city of Carcassonne. The vineyards are spread across the foothills of the Montagne Noire (Black Mountain) and benefit from a variety of microclimates due to the region’s diverse geography.

“Les Dissidents”

The term “Les Dissidents” is a term in French used to refer to the winemaker who opposes or dissent from the established norms, authority, or mainstream views within the Cabardès AOP.  Les Dissidents challenge the status quo and the established rules and policies.

Vinification

100% Chardonnay and declassified as Vin de France with low yield of 30 hectoliters per hectare, pneumatically pressed, fermented in stainless steel and aged in 2000 liters oak barrels for 4 months with only 30% undergoing malolactic fermentation. 

Ideal serving temperature –  10°C.
