Volpolo, is the winery’s second label, it’s a Bolgheri DOC, & remaining as such to maintain the designation’s high value. This blend of 70% Cabernet Sauvignon, 15% Merlot and 15% Petit Verdot is a very lively Tuscan red with great intensity, precision and longevity. A very fresh and enticing nose of bright blueberries, newly picked blackcurrants, crushed stones, pressed violets, dried sage, ash and cedar. Full-bodied and ever so tight with firm, polished tannins punctuated by vibrant acidity. Long and taut on the finish. Manual harvest and grape selection are followed by a long maceration and then fermentation in controlled temperature stainless steel tanks. The wine ages in French oak barriques and tonneaux for 14 months. Followed by 6 months of bottle refinement prior release. Certified organic.
