Description
Made from indigenous Zibibbo clones from Messina, “Case Bianche” is a golden and bright straw yellow wine that on the nose expresses intense notes of fresh rose, peach and citrus, along with a Mediterranean scrub feel and sea spray, revealing a smooth and mineral mouthfeel, savoury and with a persistent freshness. Hand harvested at the end of August in small 10kg crates, the grapes go through a careful selection before a cold maceration for 18 hours. The must will be gently pressed and fermentation takes place in barriques. The wine is also aged for another 3 months in 225 liter new and used barriques. Further aging in bottle takes place before the wine is released. Deep and engaging, Enza La Fauci’s “Case Bianche” is a great white wine to pair with great fish dishes, such as a lobster & prawn based first courses, or as an aperitif.
